Pate Kode Recipe: Crispy Haitian Street Snack

Ingredients
  

For The Dough

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • ¾ cup warm water

For The Filling

  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • ½ cup bell pepper chopped
  • ½ cup green onion chopped
  • 1 cup cabbage shredded
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • 2 tablespoons fresh parsley chopped
  • ¼ cup water

For Frying

  • 2 –3 cups frying oil

Instructions
 

Step 1: Make The Dough

  • In a bowl, mix flour and salt.
  • Add vegetable oil and warm water.
  • Mix with a spoon until a soft dough forms.
  • Knead on a cutting board for 5–7 minutes until smooth.
  • Cover and let it rest for 15 minutes.

Step 2: Prepare The Filling

  • Heat oil in a skillet over medium heat.
  • Add garlic, bell pepper, and green onion. Cook for 2 minutes.
  • Add cabbage, seasoning, and salt.
  • Pour in water and cook until soft and dry.
  • Stir in parsley and let the filling cool.

Step 3: Shape The Patties

  • Divide dough into small balls.
  • Roll each into a thin circle using a rolling pin.
  • Place a spoon of filling in the center.
  • Fold in half and press edges with a fork to seal.

Step 4: Fry The Pate Kode

  • Heat frying oil in a deep skillet.
  • Fry patties in batches until golden brown.
  • Flip halfway for even color.
  • Remove and place on paper towels.
