  • 1 cup Fruity Pebbles cereal
  • 1 cup Frosted Flakes
  • 1 cup Nilla wafers crushed
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup melted butter unsalted

For The Filling:

  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream cold
  • 1/2 cup Fruity Pebbles cereal plus more for topping

Instructions
 

Step 1: Make The Cereal Crust

  • In a mixing bowl, stir together the crushed Fruity Pebbles, Frosted Flakes, and Nilla wafers. Add sugar, salt, and melted butter. Stir until it feels like damp sand. Press the mixture into a 9-inch pie pan using the back of a spoon or your fingers. Make sure the crust is evenly packed. Pop it in the freezer while you make the filling.
  • Tip: Don’t skip freezing—it helps the crust firm up without baking.

Step 2: Whip The Cream

  • In a chilled bowl, whip the heavy cream until stiff peaks form. Set aside. This gives the pie that light, mousse-like texture.

Step 3: Make The Cheesecake Base

  • In another bowl, beat the softened cream cheese until smooth. Add the sour cream, powdered sugar, and vanilla extract. Mix until everything is creamy and lump-free.

Step 4: Combine And Fold

  • Gently fold the whipped cream into the cheesecake mixture. Once it’s smooth and fluffy, stir in 1/2 cup Fruity Pebbles cereal.

Step 5: Fill And Chill

  • Pour the filling into the chilled crust and smooth the top. Sprinkle extra Fruity Pebbles on top for color and crunch. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight if you can wait that long.
