Ottappam Recipe: Easy South Indian Breakfast

- 1 cup rice flour
- ¼ cup maida
- 2 large eggs
- 1½ cups water adjust for batter consistency
- ½ teaspoon salt
- 1 small onion finely chopped
- 1 medium tomato finely chopped
- ½ cup grated carrot
- 2 green chilies finely chopped
- 2 tablespoons coriander leaves chopped
Step 1: Prepare The Batter
Take a large bowl and add rice flour and maida mix.
Pour water slowly while whisking to avoid lumps.
Crack the eggs into the bowl and mix well.
Add salt and stir until smooth.
Tip from my kitchen: Batter should flow easily but not feel watery.
Step 2: Add Vegetables
Add onion, tomato, carrot, green chilies, and coriander leaves.
Mix gently so vegetables spread evenly through the batter.
Step 5: Cook The Ottappam
Pour one ladle of batter onto the pan.
Spread slightly into a thick round shape.
Cover and cook for 2–3 minutes.
Drizzle a little oil around the edges.
Flip carefully and cook the other side until golden.
Step 6: Repeat
Continue cooking remaining batter the same way.
