Ingredients

  • 3 cups shredded cooked chicken
  • 1 10.5 oz can cream of chicken soup
  • 1 10 oz can Rotel tomatoes (drained slightly)
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese or a mix of cheddar and Monterey Jack
  • 4 cups Nacho Cheese Doritos crushed
  • Optional: 1/2 cup chopped green onions
  • Optional: 1 small can green chilies for extra heat

Instructions

Preheat The Oven

  • Set your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.

Mix The Filling

  • In a large bowl, combine the shredded chicken, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning. Mix until everything is well combined.
  • Pro Tip: If your mixture feels too thick, add an extra splash of milk to loosen it up.

Layer It Up

  • In the casserole dish, spread half of the crushed Doritos on the bottom. Pour the chicken mixture over the top and spread it out evenly. Sprinkle the shredded cheese all over the top, then finish with the rest of the crushed Doritos.

Bake

  • Place the dish in the oven and bake for 25–30 minutes, or until the cheese is bubbly and golden on top.
  • Optional: In the last 5 minutes, switch to broil for a crispier topping—but keep an eye on it!

Serve

  • Let it cool for a few minutes before serving. Top with green onions, extra cheese, or a dollop of sour cream if you’d like.
