Ingredients

  • 1 cup unsalted butter softened
  • ¾ cup dark brown sugar
  • ½ cup white sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ¾ teaspoon sea salt
  • 1 cup bittersweet chocolate chips
  • ¾ cup semisweet chocolate chips
  • ¾ cup chopped walnuts optional
  • Fleur de sel for garnish

Instructions

Step 1: Mix The Butter And Sugars

  • In a large bowl, beat butter, dark brown sugar, and white sugar until smooth and creamy. The mixture should look light and slightly fluffy.

Step 2: Add Eggs And Vanilla

  • Mix in eggs one at a time, scraping the bowl after each addition. Stir in vanilla extract until combined.

Step 3: Combine Dry Ingredients

  • In a separate bowl, stir flour, baking soda, and sea salt. Add this to the wet mixture in batches. Mix just until the dough comes together.

Step 4: Fold In Chocolate And Nuts

  • Gently stir in bittersweet chocolate chips, semisweet chocolate chips, and walnuts. The cookie dough should feel thick and rich.

Step 5: Chill The Dough

  • Cover the bowl and place it in the fridge for at least one hour. Longer chilling builds better structure and flavor.

Step 6: Prepare For Baking

  • Heat oven to 350°F. Line a baking sheet with parchment paper.

Step 7: Scoop And Bake

  • Scoop large dough balls and space them apart on the baking sheet. Bake for 12–14 minutes until edges set and centers stay soft.

Step 8: Finish With Salt

  • Right after baking, sprinkle a pinch of fleur de sel on each cookie. Let cookies rest on the sheet for five minutes, then move to a rack.
