Ingredients
  

  • 4 large overripe plantain peeled and sliced
  • 1 red bell pepper
  • 1 medium onion
  • 1 scotch bonnet chilli adjust to taste
  • 2 tablespoons palm oil
  • 2 tablespoons ground crayfish
  • 1 teaspoon seasoning powder
  • Salt to taste
  • ½ cup cornmeal
  • ½ cup flaked smoked catfish fillets
  • Warm water as needed

Instructions
 

Step 1: Prepare The Base

  • Place the sliced plantain, red bell pepper, onion, and scotch bonnet into a blender. Add a little warm water. Blend until smooth and thick.
  • Kitchen Tip: The texture should look like smooth pap, not watery.

Step 2: Season The Mixture

  • Pour the mixture into a bowl. Add palm oil, seasoning powder, salt, ground crayfish, and cornmeal. Stir with a wooden spoon until even.

Step 3: Add The Fish

  • Gently fold in the smoked catfish fillets. I like leaving small chunks so each bite feels special.

Step 4: Prepare Containers

  • Grease foil container lightly or line them with banana leaves. Banana leaves add a light aroma many Nigerian kitchens love.

Step 5: Fill And Steam

  • Scoop the mixture into containers, leaving space at the top. Arrange in a pot, add hot water halfway up the sides, cover, and steam for about 45–50 minutes.

Step 6: Check For Doneness

  • Insert a toothpick into the center. If it comes out clean, your Moi Moi is ready.
