Ingredients
  

  • 1 ½ lbs walleye fish fillets
  • ½ cup all-purpose flour
  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • ¾ tsp salt
  • 2 large eggs beaten
  • 1 ½ cups saltine crackers crushed (or Italian-style cracker crumbs)
  • 1 ½ cups vegetable oil for frying
  • 1 lemon cut into wedges

Step 1: Prep Your Coating Stations

  • Set up three shallow bowls:
  • Bowl 1: Flour, garlic powder, pepper, and salt
  • Bowl 2: Beaten eggs
  • Bowl 3: Crushed saltine crackers
  • This helps you coat evenly with cracker crumbs in a smooth assembly line.

Step 2: Coat The Walleye

  • Pat dry your walleye fillets with a paper towel. Dip each one into the flour mix, then the eggs, then press into the cracker crumbs. Make sure each piece is fully coated for that crisp bite.

Step 3: Fry The Walleye

  • Heat vegetable oil in a deep skillet or deep fryer to about 350°F (medium-high heat). Carefully place a few fillets at a time into the hot oil. Don’t overcrowd. Fry each side for 3–4 minutes or until golden brown and cooked through. The edges will get crispy while the inside stays flaky.

Step 4: Rest & Serve

  • Place the fried walleye on a paper towel-lined plate to drain. Serve warm with lemon wedges on the side.
