For The Dough:
- 1 packet 2 ¼ tsp active dry yeast
- 1/4 cup brown sugar
- 1/4 cup warm water 110°F
- 3/4 cup warm milk not hot
- 2 eggs room temperature
- 1/4 cup melted butter
- 3 1/2 cups all-purpose flour plus more if needed
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup mixed fruits currants, or raisins
For The Dough Cross:
- 1/2 cup flour
- 1/3 cup water adjust to form a paste
For The Glaze:
- 1 egg white
- 2 tbsp granulated sugar
- 1 tbsp water
- 1/2 tsp vanilla extract
Step 1: Activate The Yeast
In the stand mixer bowl (or regular bowl), combine warm water, yeast, and 1 tbsp of the brown sugar. Let it sit for 5–10 minutes until it looks foamy.
Tip: If it doesn't foam, your yeast might be expired or the water too hot/cold.
Step 2: Mix The Dough
Add warm milk, melted butter, the rest of the brown sugar, eggs, salt, cinnamon, and nutmeg to the bowl. Mix gently to combine. Slowly add flour while mixing on low. Then knead the dough for 5–7 minutes (use a stand mixer with a dough hook or do it by hand) until it forms a soft, slightly sticky dough ball.
Step 4: First Rise
Cover the bowl with a kitchen towel and let the cross buns dough rise in a warm spot for about 1 hour or until it doubles in size.
