Ingredients
  

  • 6 roma tomatoes chopped
  • 1 small yellow onion roughly chopped
  • 1 jalapeno pepper seeded (leave seeds for more heat)
  • ½ poblano pepper chopped
  • 2 tbsp fresh cilantro
  • 1 tsp celery salt
  • ½ tsp dried oregano
  • 1 tsp garlic salt
  • 1 tsp sugar
  • ½ tsp black pepper
  • ½ cup water

Step 1: Prep The Vegetables

  • Place chopped tomatoes, onion, jalapeno pepper, and poblano pepper into a blender or food processor. Rough chopping helps everything process evenly.

Step 2: Add Seasonings

  • Add celery salt, oregano, garlic salt, sugar, black pepper, cilantro, and water into the bowl of the blender.

Step 3: Blend To Desired Texture

  • Pulse several times until the salsa reaches a smooth restaurant-style consistency. I like mine slightly textured rather than completely pureed.

Step 4: Cook The Salsa

  • Pour the salsa into a pan or skillet over medium heat. Let it simmer for about 8–10 minutes. Stir occasionally.
  • This quick heating step softens the onion and peppers and helps all flavors come together.

Step 5: Taste And Adjust

  • Taste carefully. Add a pinch of salt or sugar if needed. Let the salsa cool slightly before serving.

Step 6: Chill For Best Flavor

  • Transfer to a bowl and refrigerate for at least 30 minutes. The flavor gets better after resting.
