Ingredients
  

  • 2 filet mignon steaks about 6–8 oz each, trimmed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp McCormick Grillmate Steak Seasoning or your favorite steak rub
  • 2 tbsp unsalted butter softened
  • 1 tbsp gorgonzola cheese crumbled
  • 1 tsp fresh parsley finely chopped
  • 1 garlic clove minced
  • Salt and freshly cracked black pepper to taste

Instructions
 

Prepare The Butter Topping.

  • In a small bowl, mix softened butter, gorgonzola cheese, parsley, and minced garlic. Stir well, then set aside in the fridge so it firms up while you cook the steak.

Season The Steaks.

  • Pat the steaks dry with paper towels to help them sear better. Rub both sides with olive oil, then sprinkle with Grillmate seasoning (or your own blend). Let them sit at room temperature for 15 minutes before cooking.

Heat The Pan.

  • Place a heavy skillet (cast iron works best) over medium-high heat until very hot. You want that pan screaming hot to lock in the flavors.

Cook The Steaks.

  • Add the steaks to the hot skillet and sear for 2–3 minutes per side for a medium-rare finish. Adjust cooking time depending on how you like your steak. Use a meat thermometer if you prefer precision:
  • Rare: 125°F
  • Medium Rare: 135°F
  • Medium: 145°F

Rest The Steak.

  • Once done, transfer steaks to a plate and let them rest for 5 minutes. Resting helps the juices settle so the steak stays moist.

Top With Butter.

  • While the steaks are still warm, place a spoonful of the herbed gorgonzola butter on top and let it slowly melt over the meat. That rich butter mixed with the heat of the steak is what makes this taste just like Bonefish Grill’s.
