14 oz each hearts of palm, drained and rinsed (or 12-15 fresh hearts of palm, trimmed and diced)

bell peppers, carrots, peas, etc.

Fresh herbs
parsley, thyme, or cilantro, chopped (optional)
Instructions
If using fresh hearts of palm, trim and dice them into rice-sized pieces. If using canned hearts of palm, drain and rinse them before dicing.
In a pan, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
Add minced garlic and cook until fragrant.
Incorporate the diced hearts of palm and chopped vegetables into the pan. Sauté for a few minutes until the vegetables are tender.
Season the mixture with salt and pepper according to your taste preferences.
If desired, add fresh herbs for an extra layer of flavor.
Stir well to combine all the ingredients and let them cook for another minute or two.
Remove from heat and serve warm.
