Ingredients
  

  • 2 cans 14 oz each hearts of palm, drained and rinsed (or 12-15 fresh hearts of palm, trimmed and diced)
  • 2 tablespoons olive oil
  • 1 cup chopped vegetables bell peppers, carrots, peas, etc.
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh herbs parsley, thyme, or cilantro, chopped (optional)

Instructions
 

  • If using fresh hearts of palm, trim and dice them into rice-sized pieces. If using canned hearts of palm, drain and rinse them before dicing.
  • In a pan, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
  • Add minced garlic and cook until fragrant.
  • Incorporate the diced hearts of palm and chopped vegetables into the pan. Sauté for a few minutes until the vegetables are tender.
  • Season the mixture with salt and pepper according to your taste preferences.
  • If desired, add fresh herbs for an extra layer of flavor.
  • Stir well to combine all the ingredients and let them cook for another minute or two.
  • Remove from heat and serve warm.
