Step By Step Instructions

Step-1:

Slice the potatoes into small blocks and boil them in hot water to soften.

Cut the salami into cubes. Add salt and pepper to taste. In another bowl, place the garlic, onion, marinade and, seasonings, and sofrito in a blender or food processor. Blend until you get a smooth sauce or paste. Stir this sauce into the salami cubes and marinate for about 15 minutes.

Add 2 tablespoons of olive oil to a cooking pot over medium heat. Throw in the potatoes with their broth and cook for about 20 minutes until tender.

Step-3:

Add in the tomato sauce and cook for another 15 minutes stirring occasionally. When the potatoes are about 80% cooked, add in half of the salami cubes and cook for another 10 minutes.

Add in more water if necessary for consistency. Cook for about 30-40 minutes, until all sauce, has evaporated and potatoes are tender.

Step-4:

Add the plate of meatballs to the soup and cook for another 15-20 minutes until the meatballs are cooked through.

Step-5:

Add the salami chunks, bell pepper chunks, and pasta to your soup and cook until done according to preference or taste.

Serve in serving bowls and enjoy!
