Instructions
 

  • Preparation: Start by cleaning and trimming the Dragon Tongue Beans. Depending on your preference, you can keep them whole or cut them into bite-sized pieces.
  • Blanching: Briefly blanch the beans in boiling salted water. This process enhances their color and tenderizes them slightly. After blanching, quickly immerse them in ice water to preserve their vibrant colors.
  • Sautéing Aromatics: Melt butter and sauté finely minced shallots and garlic in a skillet. This base will infuse the dish with a rich, savory aroma.
  • Adding Pancetta And Mushrooms: Cook pancetta in the same skillet until it’s slightly crispy, then add crimini mushrooms. The pancetta adds a salty depth, while the mushrooms contribute an earthy flavor.
  • Combining Ingredients: Add the blanched beans to the skillet once the mushrooms are cooked. Toss everything together, ensuring the beans are well-coated with pancetta, mushrooms, and aromatics flavours.
  • Seasoning: Season with salt, freshly ground pepper, and a hint of chili flakes for a gentle kick.
