- 1 cup Heavy cream
- 2 cups Milk
Beer, Wine & Liquor
- 1/4 cup Cognac/whisky
Instructions
Step 1: Bring milk and heavy cream to a simmer in a saucepan. In a bowl, whisk egg yolks, sugar, cinnamon, nutmeg, cloves, and salt until thick and pale in color.
Step 2: Remove from heat; using a ladle, pour 1/3 of the hot milk into the egg mixture while constantly stirring with the other hand. The eggs must not scramble on cooking.
Step 3: Then add another third of the hot milk mixture into the eggs again through the top of your mixing bowl. Stir to mix well; set aside to cool slightly (if there are any lumps that have formed, use a spatula or mesh strainer to scrape them out).
Step 4: In a separate bowl, mix together the vanilla extract, Cognac, and remaining hot milk in a saucepan. Stir until well mixed; pour into the egg mixture.
Step 5: Reheat the egg mixture (milk-egg mixture) over medium heat, constantly stirring with a wooden spoon, and cook until thickened and starts to coat the back of a spoon or spatula.
Step 6: When you see bubbles around the edges of the pan, it is ready to use. Pour through a mesh strainer into a clean container and let cool for about 5 minutes.
Step 7: If you like the taste of alcohol in the eggnog, add a little more; if you don’t, leave it out. Then pour through a strainer into your container to separate the liquid and any remaining egg yolk bits.
Step 8: Cover and chill until cold, at least 6 hours, or overnight (if it can wait that long). Before serving, shake well to combine again. To serve, pour into glasses, top with whipped cream, and sprinkle with nutmeg.
